Amid the swirling conviviality at La Concha Bakery in Fitchburg, customers banter and catch up on news while piling their trays with mounds of fresh-baked breads and tempting sticky sweet pastries. Youngsters clutch large cookies decorated with frosting and colored sprinkles. And in four cloistered booths along a back wall, a steady succession of customers quietly sends millions of dollars to family members abroad. The booths, each outfitted with a chair and a red telephone, connect customers with an exchange agency that handles international bank transfers.
